The grapes for this Mauro Sebaste 2021 Dolcetto di Diano D'Alba DOCG come from a steep hill located in one of the strongholds for Dolcetto wines, Diano D'Alba. The family has long owned a plot there that is planted with Dolcetto vines that are on average forty years old.
In early autumn, the hand-picked grapes are carefully selected for further processing. The grapes are then gently pressed in the cantina. Contact with the shell lasts approximately 6-8 days in temperature-controlled stainless steel tanks. After racking, malolactic fermentation follows and the wine then ages in steel tanks for 6-8 months. The bottling finally takes place in the spring after the grape harvest.
This Dolcetto has a beautiful ruby red color. Intense and fruity aromas impress on the nose. The taste of the wine is dry, dense and harmonious. The fine-grained tannins are well balanced with the moderate acidity. The long aftertaste has pleasant almond-like notes.
